Bruschetta dates back to 15th century Italy. Traditionally, it is grilled bread, rubbed with garlic, and topped with olive oil, salt and pepper. More modern toppings include combinations of tomatoes, cheese, mushroom, olives, peppers and mushrooms. Some say that bruschetta was invented by farmers. When olives were taken to the mill to be pressed, bread was toasted by the fire, and then placed under the press to catch a drizzle of oil for tasting. Eventually, garlic and salt were added to the mixture. Today, bruschetta is usually served as an appetizer. |
